3 ingredient Cucumber Salad! A SoGAL 5 minute side!
I’m all about fresh, easy sides during the week, especially as summer approaches. This 3 ingredient cucumber salad is light, refreshing, and pairs perfectly with grilled meats! Even better, it’s ready in 5 minutes or less!
Here’s All You Need:
2, English cucumbers (those are the long, slender ones), washed and cubed or sliced (I like to peel just a couple of strips of the skin for appearance and texture but leave most of the skin on for nutrition. Be sure to wash the skin well.)
1, 8 oz. container of plain Greek yogurt
2 tbsp. of your favorite dry ranch seasoning. (I love it with Wildtree’s Chipotle Ranch or Dill Dip blend.)
Here’s All You Do:
Wash and cut or slice your cucumbers. Toss in large mixing bowl then add your yogurt and seasoning and stir well until blended. Refrigerate about 15 minutes before serving when possible. That’s it!! Goes great with grilled chicken, lamb, pork or steak. Garnish with a dash or two if the seasoning (optional) Enjoy!
