Oh So Easy Almond Cookies- Gluten Free!
I admit it, I am mildly obsessed with Almond Paste. Ok, Ok, not to the point that I eat it straight out of the box, but close enough! I just cannot get enough of it …so get ready for some almond paste lovin’ recipes coming your way just in time for Easter! With only 5 ingredients these little puppies are sure to be added to your go-to dessert list! They are even gluten free which makes them an amazing option for parties and pot lucks.
Here’s All You Need:
8 ounces of Almond Paste
1/3 cup granulated sugar
2 large egg whites
1 pinch of salt
1 1/2 cups of sliced almonds
Here’s All You Do:
Pre-heat your oven to 350 degrees
Line Large Baking sheet with Parchment Paper
Dump your almonds into a wide bowl or pie plate (something that will be wide enough to roll the cookies and deep enough to layer the almonds.)
In a large, deep Mixing Bowl: tear the almond paste into small pieces. Add sugar and beat on low. Pieces will easily fly out of the bowl so try to shield the bowl with your arm if you are using a hand mixer or drape a standing mixer with a cloth napkin or dish towel. Mix until the almond paste pieces are as small as you think you can get them and somewhat blended with the sugar. Add egg whites and salt and beat until well blended and creamy.
Place a bowl with water next to you as you will want to keep your hands wet as you work with the cookie dough. It will be sticky and runny. Keep your hands wet and place approximately 1 tablespoon of the dough in the palm ofyour hand and make a ball. Once you’ve somewhat “shaped” it, roll it in the almonds covering the entire cookie with almonds then place it on the parchment paper.
Bake for 12 to 15 minutes until lightly browned. Let cool and enjoy!
