Go-to Summer Salad: Chic Peas with Feta and Cucumber
I started making this salad several years ago and it’s become one of my summer staples. It’s so easy and quick to prepare and it’s something a little different to bring along to Summer BBQs and parties.
Here’s All You Need:
1, 15.5 oz can of organic chic peas
1 English cucumber, washed (leave skin or at least part of skin on) and chopped
1 medium tomato, washed and chopped/diced
1 medium red onion, washed and chopped/diced
1 orange pepper washed and chopped/diced
2 stalks of celery, washed and chopped/diced
1 cup of feta cheese
1/3 cup of olive oil or grapeseed oil
juice from 1 lemon
1 teaspoon of garlic salt
1 tablespoon of crushed oregano
Here’s All You Do:
Combine the chic peas, cucumber, onion, peppers, celery, and tomato and stir until well mixed. In a separate bowl, combine the oil, oregano, lemon juice and garlic salt and mix together until very well blended. Add to the veggies , dump in your feta cheese and toss until blended. Regrigerate until you are ready to serve. Garnish with additional Oregano, salt and pepper or any fancy cut herb or veggie sprig or flower.
