Chicken Sausage with Broccoli Rabe
Broccoli Rabe is a delicious and nutritious Springtime favorite in our house. Although we enjoy it throughout the year, it is in season in the spring and therefore on sale over the course of the next few weeks! If you have never tried it, it is nothing like regular broccoli It has a nutty, bitter flavor that is unique to itself. Preparing it properly will remove the extreme bitterness making way for a really unique and delicious flavor.
When selecting your Broccoli Rabe at the store, look for bright crisp leaves (with no or very little yellow) and dark green, tight florets. The thinner stems are generally a bit more tender.
When preparing your Rabe, you want to wash it thoroughly. I usually soak it then wash each piece individually. Remove about an inch or so of the stem (up until you no longer see white in the middle.) Leaving each stem as one piece, you then quarter the stem, slicing it up to the greens. This will help make the stems tender and blend well. You can then cook the long pieces or cut the whole stems into thirds or quarters. I like them left long when using it as a side but generally cut the Rabe into smaller pieces when incorporating it in a dish like this one.
Here’s What You Need:
1 bunch of Brocolli Rabe, washed and cut
Dash of salt
1 Low-Salt Pinwheel Chicken Sausage (any flavor works well, some stores even sell a Brocolli Rabe and cheese chicken sausage that is great!)
4 cloves of garlic, sliced
Olive or Grapeseed oil
1/4 cup fresh Grated Parmesan cheese
Red Pepper Flakes (optional)
Here’s What You Do:
Wash and prepare your Broccoli Rabe. Add a dash of salt to the Rabe once it is ready and set aside.
Drizzle a thin coat of olive oil in a large, deep skillet. Warm and add your garlic and red pepper flake (optional). Cook garlic until just translucent then add the sausage. Sear the sausage on each side (a couple minutes each) then add 3/4 cup of water and stir to pick up juices from the sear. Reduce heat and add your broccoli Rabe. Add a drizzle or two more oil if the Rabe is sticking. Saute for several minutes, stirring frequently until Brocolli Rabe starts to get tender. Cover and let simmer. Keep an eye on it, you might need to add a dash or two of water. Cook for about 20 minutes until the sausage is cooked through and the Rabe is tender. Remove the sausage and cut into pieces then return to the skillet and stir well to absorb all flavors before plating. Garnish with Parmesan cheese and serve immediately. You can also sprinkle with Red Pepper Flake if you choose or serve it as a garnish. Serve with Garlic Bread OR crusty bread and enjoy!
