Roasted Chic Pea and Black Bean Snack Mix
Ok, so you might be saying: ummmm what? This Gal must be losing it! but I swear you are going to thank me for this recipe! This spicy little snack mix is super easy and so delicious AND it packs a real punch of nutrition that you don’t normally find in snack mix. High in fiber and protein, this snack will satisfy your savory/salty craving without the guilt! It’s also great on salads or soups instead of croutons!
Here’s What You Need:
1, 15.5 oz can of black beans, drained
1, 15.5 oz can of chic peas (Garbanzo Beans), drained
1 teaspoon of Garlic Salt
1 teaspoon of Mexican Chili Powder
1 teaspoon of Cayenne Pepper
1 Teaspoon of Ground Coriander
1/4 cup of Olive Oil
Here’s What You Do:
Pre-heat your oven to 450 degrees.
In a medium sized mixing bowl, mix together your Garlic Salt, Cayenne Pepper, Chili Powder and Ground Coriander Seed then add the olive oil and mix together. Drain your chic peas and black beans and pat them dry with a towel. (the dryer they are, the faster they will cook and the crispier they will get!) Toss them into the seasoning and oil until well coated. Lay them on an aluminum or other metal baking tray and spread them out as thinly as possible. Bake for approximately 30 to 40 minutes until crispy.
