Friday Night Flatbreads: Garlic and Red Pepper Flatbread with Bacon and Spinach
Friday Night Flatbreads are fun and oh so easy! Perfect when you don’t feel like much like cooking at the end of the week. These flatbreads are also great to serve for last minute get-togethers and game night! This recipe os for a scrumptious spinach bacon flatbread but feel free to get creative with your own toppings.
Here’s What You Need:
For the No Yeast flatbread:
1 1/2 cup of flour
1 1/4 teaspoon of baking powder
1/2 teaspoon of salt
1/2 cup milk
1 tablespoon of chopped garlic
1 tablespoon of red pepper flake
2 tablespoons of Olive or Grapeseed oil
For the topping:
6 strips of bacon, cubed
2 handfuls of spinach, rinsed and shredded
3 tablespoons low fat cream cheese
1/4 cup of grated Parmesan
1/4 cup of shredded mozzarella
Parsley flakes to garnish
Here’s What You Do:
Pre-heat oven to 425 degrees
Cook your bacon on the stove so it is cooked through but not browned. (It will cook more in the oven)
In a small bowl, combine the crust ingredients and mix well. Use your hands to spread it out on your pizza stone or pizza pan, then roll out until it is about 1/4 inch thick. Spread the cream cheese on it as evenly as possible although it will not be perfectly spread out. Add you spinach, bacon, Parmesan cheese, and lastly the mozzarella. Sprinkle with parsley flakes. Bake for approximately 12 minutes until crust is browned. Serve on cutting boards, cheese stones, or flatbread trays for an easy, trendy presentation!
